Drumstick and spinach with shredded coconut

Today, we will prepare a dish using grated coconut, consisting of spinach, jackfruit seeds, and drumsticks. This is a very tasty dish as the vegetables blend well together, creating a delicious and satisfying meal.

Ingredients

  • Drumstick – 1
  • Spinach – 1 bunch
  • Jackfruit seeds – 10
  • Shallots – 10
  • Grated coconut – 3/4 cup
  • Dry red chillies – 3
  • Green chillies – 2
  • Mustard seeds – 1/2 teaspoon
  • Turmeric powder – 1/2 teaspoon
  • Salt – to taste
  • Coconut oil – 2 tablespoons

Method of Preparation

1. Cooking the Jackfruit Seeds

  1. Peel off the jackfruit seed skin and cut each seed vertically into 6 pieces.
  2. Wash and clean the seeds thoroughly.
  3. Pressure cook with a pinch of salt and 1/4 teaspoon of turmeric powder for one whistle.
  4. Let the pressure release naturally and set aside.

2. Cooking the Drumstick

  1. Peel and cut the drumstick into pieces.
  2. Cook it separately by adding 1/4 cup of water in a vessel.
  3. Close the lid and cook on medium flame until tender.
  4. Once cooked, switch off the flame.

3. Final Preparation

  1. Heat coconut oil in a kadai and sputter mustard seeds.
  2. Add dry red chillies and chopped shallots.
  3. Stir in salt, green chillies, and 1/4 teaspoon turmeric powder.
  4. Add grated coconut and mix well until the raw smell disappears.
  5. Add finely chopped spinach and cover with a lid for 2 to 3 minutes, stirring occasionally.
  6. Open the lid and stir until excess water evaporates.
  7. Add the cooked jackfruit seeds and drumsticks.
  8. Mix everything well and cook for 2 minutes on low flame.
  9. Adjust salt if needed.
  10. Your delicious dish is now ready to serve!
