Today, we will prepare a dish using grated coconut, consisting of spinach, jackfruit seeds, and drumsticks. This is a very tasty dish as the vegetables blend well together, creating a delicious and satisfying meal.

Ingredients
- Drumstick – 1
- Spinach – 1 bunch
- Jackfruit seeds – 10
- Shallots – 10
- Grated coconut – 3/4 cup
- Dry red chillies – 3
- Green chillies – 2
- Mustard seeds – 1/2 teaspoon
- Turmeric powder – 1/2 teaspoon
- Salt – to taste
- Coconut oil – 2 tablespoons
Method of Preparation
1. Cooking the Jackfruit Seeds
- Peel off the jackfruit seed skin and cut each seed vertically into 6 pieces.
- Wash and clean the seeds thoroughly.
- Pressure cook with a pinch of salt and 1/4 teaspoon of turmeric powder for one whistle.
- Let the pressure release naturally and set aside.
2. Cooking the Drumstick
- Peel and cut the drumstick into pieces.
- Cook it separately by adding 1/4 cup of water in a vessel.
- Close the lid and cook on medium flame until tender.
- Once cooked, switch off the flame.
3. Final Preparation
- Heat coconut oil in a kadai and sputter mustard seeds.
- Add dry red chillies and chopped shallots.
- Stir in salt, green chillies, and 1/4 teaspoon turmeric powder.
- Add grated coconut and mix well until the raw smell disappears.
- Add finely chopped spinach and cover with a lid for 2 to 3 minutes, stirring occasionally.
- Open the lid and stir until excess water evaporates.
- Add the cooked jackfruit seeds and drumsticks.
- Mix everything well and cook for 2 minutes on low flame.
- Adjust salt if needed.
- Your delicious dish is now ready to serve!
