Sharing with you all an absolutely favorite dish in Kuttanadu, which is a taluk in Alapuzha district of Kerala. In this recipe, duck pieces are marinated first and then fried in hot oil. This fried duck pieces are then mixed with a prepared masala and roasted in oil till it becomes darker in color and texture with a little gravy.

Kuttanad duck roast pairs wonderfully with steamed rice, Kerala-style appam (a type of rice pancake), or even traditional Indian bread like roti or naan.

In essence, Kuttanad duck roast is a harmonious fusion of spices, aromatics, and tender duck meat that reflects the essence of Kerala’s culinary traditions. The key lies in the careful layering of flavors and the slow-cooking process that allows the spices to infuse the meat, resulting in a dish that is rich, hearty, and incredibly satisfying. Ingredients

Marinating Duck Pieces :

 
  1. Duck pieces, washed and cleaned – 1 kg
  2. Half teaspoon of salt
  3. Half teaspoon of turmeric powder
  4. 1 teaspoon of chilli powder
  5. 1 teaspoon of Ginger garlic paste

Preparation of Gravy

 
  1. Onions – 4
  2. Tomato – 2
  3. Green chilli – 2
  4. half teaspoon of turmeric powder
  5. 1.5 teaspoon of Kashmiri chilli powder
  6. 2 teaspoon of coriander powder
  7. 1 teaspoon of meat masala 
  8. 1/4 teaspoon pepper powder to it
  9. Coconut milk – 1 cup of 2nd milk and 3/4 cup of 1st milk
  10. Oil
  11. Curry leaves
  12. Potato – sliced lengthwise and fried 

Method of preparation

1.Take 1 kg of cleaned duck pieces in a bowl

2.Add half teaspoon of salt, half teaspoon of turmeric powder, 1 teaspoon of chilli powder and 1 teaspoon of Ginger garlic paste

3.Mix it well with hand and marinate it for 1 hour

4.After 1 hour, shallow fry all the duck pieces in oil

5.Take a pressure cooker and add 3 tablespoon of oil which was used for frying the duck pieces

6.Add 2 chopped onions and 2 green chillies to the oil

7.Blend the remaining 2 onions to form a paste

8.Add the onion paste and 2 tomatoes to the oil

9.Add curry leaves and saute well

10.Add half teaspoon of turmeric powder,1.5 teaspoon of Kashmiri chilli powder,2 teaspoon of coriander powder,1 teaspoon of meat masala and 1/4 teaspoon pepper powder to it

11.Add 1 cup of 2nd milk of coconut and allow it to boil

12.Now add the fried duck pieces

13.Cook the duck curry in pressure cooker

14.Transfer the boiled curry to a pan

15.Add 3/4 cup of 1st milk of coconut

16.Add some curry leaves and allow it to dry roast.

17.Slice one potato and fry it in oil to garnish the Duck roast

18.Our Kuttanadan Duck Roast is ready to serve.
