Caramel Bread Pudding with Apple

This is a simple pudding recipe of bread with apple and an egg custard sauce. This is similar to the bread pudding. But we are adding apple to give an additional flavor to pudding. Apples can be added directly to the bread mixture or can be caramelized before adding. I had added the apples in small cubes directly without caramelizing.

Apple bread pudding is an amazing comfort dessert which you can have at any time of the day. You can enjoy this pudding both as a warm and cold dessert. This is an easy recipe where the total preparation time is under 60 minutes. Here bread crumbs are soaked in a custard sauce along with small pieces of apple. Adding apple to the pudding makes it extra delicious.

A day older breads are usually taken to prepare the bread puddings. They will be more firm. Previously I had shared the recipe of pineapple bread pudding in my blog. There is a slight variation in these 2 recipes. The taste of apple gets immersed in the custard sauce. Milk and eggs makes this pudding more soft and flavorful.

I usually use milk bread or sweet bread to prepare bread pudding. I would never prefer wheat bread for this recipe since there is a great difference in taste. This recipe can serve 4 to 5 people. The total preparation time is 15 minutes and the cooking time is 25 minutes.

It is an easy dessert for parties and other functions where large quantities are needed. In our family, everyone loves to have sweets after lunch. So, bread pudding play a big role in my home. You can either steam or bake this pudding. Enjoy this super tasty and homey dessert !

Ingredients :

1. For bread pudding

  • Bread slices – 6
  • Apple finely chopped – 1
  • Milk – 2 cups
  • Egg – 2
  • Sugar – 3/4 cup
  • Vanilla essence – 1 1/2 teaspoon

2. For preparing caramel

  • Sugar – 2.5 tbsp
  • Water – 1 tbsp

Method of Preparation :

  • Blend the bread slices into fine crumbs and keep aside.
  • Take a pan and add milk and sugar to it.
  • Now add beaten eggs and vanilla essence into the milk mixture.
  • Heat the milk mixture on low flame. Do not boil
  • When the milk becomes hot, switch off the flame and add the bread crumbs and apple pieces to it
  • Take another pan and add 2.5 tablespoon of sugar and 1 tablespoon of water
  • Make sure the pudding mixture also gets fit in the pan, by leaving some space on the top
  • Place this pan on a flame to melt the sugar
  • Stir continuously so that the sugar doesn’t burn
  • Keep on stirring till small bubble appears and the colour of caramel changes to golden
  • Using tongs, tilt and move the pan so that the caramel gets evenly spread across the pan
  • Now add the bread, apple and milk mixture to this caramelized pan
  • Cover the pan with an aluminum foil by putting some holes on the foil using tooth pick
  • Place the pan in a steamer and then cook the pudding for 25 minutes or till the pudding gets detached from the pan.
  • Remove from heat, and when the pudding cools down, refrigerate it for 2 hours
  • After 2 hours, you can unmould by turning the pudding upside down
  • Cut it into slices and serve.

Sharing with you all the recipe of a soft and moist cake with layers of chocolate and vanilla swirled together. This is a simple recipe of cake which can be easily prepared but adding two tablespoon of cocoa powder additionally to the basic vanilla cake batter.

The presence of both the vanilla and chocolate flavour makes this cake amazing. I had used 2 tablespoon of starbucks hot cocoa for the chocolate portion of cake and I couldn’t express how tasty was the cake. You can also use normal cocoa powder instead.

The specialty of this cake is that we are using the same base cake batter to prepare both vanilla and chocolate flavour and then they are layered alternatively. After both batters are prepared, alternate spoonful of vanilla and chocolate layers are distributed evenly on the cake tin.

Bake the cake for 25 to 30 minutes in a preheated oven. Insert a toothpick in the centre of cake and make sure that it comes out with few moist crumbs. Now let us move to the recipe part.

Ingredients :

  • All purpose flour – 1.5 cups
  • Baking powder – 1 teaspoon
  • Baking soda – 1/4 teaspoon
  • Powdered sugar – 3/4 cup
  • Cocoa powder – 2 tablespoon
  • Eggs – 2
  • Sunflower oil – 1/2 cup
  • Milk – 1/4 cup
  • Vanilla essence – 1 teaspoon

Method of preparation :

  • Beat 2 eggs in a mixing bowl with the help of an egg beater or a whisk
  • Whisk the eggs until it turns fluffy and changes it colour to off white
  • Add oil to the beaten eggs
  • Now add powdered sugar, followed by one teaspoon of vanilla essence
  • Sieve together all purpose flour, baking powder and baking soda
  • Add this dry ingredient mix in batches to the prepared batter
  • You can mix the dry ingredients using a spatula or spoon
  • The batter consistency is thicker now
  • Inorder to make the batter to a pouring consistency, add 1/4 cup of milk to it
  • Take another bowl and add 2 tablespoon cocoa powder into it
  • Add sufficient water to this cocoa powder to make it into a paste form
  • Add half of the prepared cake batter to this cocoa powder mix
  • Thus we have 2 batters, vanilla batter and chocolate batter in two separate bowls
  • Place butter paper on the cake tin and then add the 2 tablespoon of vanilla batter followed by 2 tablespoon of chocolate batter
  • Similarly add these batters one by one till the batter gets over
  • After arranging the 2 batters, you can draw your own designs on the top of this cake batter using a toothpick or spatula
  • Preheat the oven at 180°C for 10 minutes and thereafter bake the cake for 30 minutes
  • If you are using a kadai or pot, preheat the kadai for 10 minutes, place the cake tin inside and close the lid
  • After 25 minutes, insert a toothpick and check whether the cake is baked completely
  • Remove the cake from cake tin once it is cooled completely
  • You can cut this cake into desired shapes and serve.

Shahi Tukda is a traditional sweet recipe which is prepared by frying the bread pieces in ghee and immersing it in a rabdi made of milk. This is a simple and best Indian dessert which everyone can easily try at your home.

This sweet dish is originated from the Nawabi cuisine. Today, shahu tukda is associated with most of the wedding parties, marriage receptions and diwali as the dessert. For preparing shahi Tukda, you have to shallow fry the bread pieces in ghee and then dip it in sugar syrup for 2 minutes. Then pour the rabdi over the toasted bread arranged in a plate.

Shahi tukda is a rich dessert. The quantity can be easily multiplied by increasing the bread and milk. When the toasted bread pieces are dunked in the sugar syrup, they become sweet and moist. The addition of rabdi, makes the bread to absorb it and becomes flavourful.

The word shahi means ‘Royal’ and tukda means ‘pieces’. Shahi tukda can be therefore called as Royal Indian Bread Pudding, which is a high caloried pudding. For a healthier version of recipe, you can brush ghee over the bread slices and toast it in oven for 6 minutes until the colour of bread changes. Thus you can avoid the extra usage of ghee while frying.

You can make this dessert a day before and refrigerate it. The total preparation time is 10 minutes and the total cooking time is 50 minutes. While dipping the bread slices, the sugar syrup should be warm. If the sugar syrup had cooled down, you may reheat the same.

It is better to serve this Shahi tukda hot. Hot shahi tukda is more tastier than the cool one. You can choose your favourite dry fruits to garnish the Shahi Tukda. You can cut the shahi tukda into smaller pieces and serve.

Ingredients :

  • Milk Bread – 10 pieces
  • Ghee – 5 tablespoon
  • Sugar – 1/4 cup
  • Water – as needed
  • Cardamom pods – 3
  • Milk – 4 cup
  • Cornflour – 1 tablespoon
  • Condensed milk – 1 cup
  • Fresh cream – 1/4 cup
  • Whipping cream – 1/4 cup
  • Pistachio – 1 handful
  • Almond or cashewnuts – 1 handful

Method of preparation :

1. ) To cook Rabdi :

First add milk to a heavy bottom pan and bring it to boil. Reduce the flame and add cornflour. Then add 3/4 cup of condensed milk. Stir continuously till it reaches a creamy consistency. Switch off the flame and keep it aside.

2. ) To make sugar syrup :

Take a pan and add 1/4 cup sugar and water. Bring it to boil. Once it starts boiling, add cardamom pods and simmer for another 5 minutes.

3. ) Preparation of Shahi Tukda :

  • Snip off the edges of bread slices
  • Heat ghee in a pan and shallow fry all the bread pieces
  • Fry until both sides become golden and crisp
  • Then dip the fried bread slices in the prepared sugar syrup for 2 to 3 minutes
  • Take a plate or tray which fits 5 bread slices and arrange 5 soaked toast on it
  • Pour few spoons of sugar syrup on the arranged toast to keep it moist
  • Now pour the rabdi over the bread evenly, covering the top
  • Sprinkle cashewnuts and pistachio over it
  • Now stack the remaining 5 toasted bread slices over the rabdi and pour sugar syrup on it
  • Beat whipping cream followed by fresh cream. Then add 1/4 cup condensed milk to this creamy mix. Mix well
  • Add this prepared cream over the 2nd layer of bread
  • Again add the rabdi to cover the top portion
  • Tap gently and add remaining pistachios and cashewnuts to garnish on the top
  • Bake for 5 minutes in a preheated oven
  • Cut in portions and serve hot.

Cheesecakes are smooth desserts which has got more than one layer. The mid layer has got a texture similar to that of a mousse and the bottom layer is a bit crunchy. The top portion can be filled with fruits, crushes or whipping cream as per your choice. This is one of the most easy dessert which you can prepare at your home.

Here is the recipe of a cheesecake which requires no baking, but the result is amazing. This no-bake cheesecake can be prepared for parties or special occasions, where you want to impress your guests. Both the crust and the creamy layer requires no baking. So, you will not be stuck in the kitchen for the whole day to prepare this dessert.

The top layer is completely based on your preference. Since blueberry crush was in my home, I had used it as the topping. You can replace it with caramel, hot fudge, whipping cream, nutella, etc.

The total preparation time is 30 minutes. You can refrigerate overnight for the best results. This cheese cake can serve 12 persons. Now, let us move to the recipe part. Make sure you have all the ingredients at your home. I had given step by step method with images on how to prepare this delicious cheesecake. Do check it out and try this dessert in your home also.

Blueberry cheesecake


1) For biscuit crust :

  • Marie Biscuit – 180 g (you can use any biscuit)
  • Melted butter – 100 g

2.) For cheese cake :

  • Cream cheese      – 200g
  • Powdered sugar – 150 g
  • Gelatine                – 2 teaspoon
  • Fresh cream        – 200 g
  • Vanilla essence   – 1 teaspoon
  • Lemon juice – 1 teaspoon

3.) For topping :

  • Blueberry crush – 3 tablespoon

Method of preparation :

1) Preparation of crust :

  • Add the biscuits to a mixer or food processor and blend it to fine pieces
  • Then add melted butter to it and mix properly using a spatula

  • Transfer this mixture to a springform pan and make sure the biscuit crumbs are evenly distributed on the bottom of the pan. You can use a tall glass to press this mix into a flat layer.
  • Keep this pan aside, while we go for the preparation of cheese cake

2) Preparation of cheese cake :

  • Take a bowl and add cream cheese
  • Soak gelatine in water
  • Now add lemon juice and powdered sugar to the bowl
  • Mix everything until it becomes creamy
  • Double boil the gelatine to form a liquid without lumps in it
  • Then add fresh cream and vanilla essence to the bowl, whisk until it becomes completely smooth
  • Add the gelatine to the prepared cream and mix well
  • Pour this batter into the springform pan as the second layer over the biscuit crust
  • Refrigerate the cheesecake to set, you can chill it overnight for the best result
  • Cover the cheesecake with a plastic wrap

3.) Preparation of topping :

  • Once the cheese cake is set, take it out of the refrigerator and spread the blueberry crush over it as the top layer
  • Instead of using spatula, you can swirl the pan slowly so that the topping is evenly distributed over the cheese cake
  • Chill it again for 30 minutes
  • Cut and serve our delicious cheesecake.

Pineapple bread pudding

Pineapple bread pudding is a dessert which is mainly made of bread slices, pineapple jam and milk. In this pudding, bread slices are simply soaked in the milk with other ingredients and is then steamed or baked.

This is a very simple recipe of pudding. We no need to add any gelatin or agar agar to this pudding. Here, we are steaming the pudding using a steamer. You can also bake the same.

Be careful while preparing caramel for this pudding. You have to stir the sugar continuously in low flame. Or else, the sugar may get burnt and the caramel will become bitter in taste.

I had used homemade pineapple jam in this recipe. I will be uploading the recipe of pineapple jam in my site soon. So, if you do not have homemade jam, you can go for readymade jam which is available in our markets.

The speciality of this pudding is, you can serve it either hot or the remaining can be refrigerated and serve cold. You can store the pudding for 3 to 4 days in refrigerator.

Ingredients :

  • Bread – 8 slices
  • Milk – 500 ml
  • Egg – 2
  • Sugar – 1 cup
  • Pineapple jam – 1/2 cup
  • Butter – 2 teaspoon
  • Vanilla essence – 1 teaspoon

For caramel :

  • Sugar – 4 tablespoon
  • Water – 2 tablespoon

Method of preparation:

  • Mix milk, sugar, 1/4 cup of pineapple jam, vanilla essence and make a custard
  • Add butter and the beaten eggs also
  • Stir till the sugar dissolves completely in milk
  • Soak the bread slices in the milk mixture
  • Mix well till the bread becomes soft
  • Take a pan and add 4 tablespoon sugar
  • In low flame stir the sugar along with 2 tablespoon of water
  • Switch off the flame when the sugar becomes golden brown in colour
  • Transfer the caramel to a vessel and spread evenly on the base of the vessel
  • Then add the milk mixture to the vessel
  • Spread the remaining 1/4 cup of pineapple jam randomly on the top of the milk mixture
  • Cover the vessel with an aluminum foil, and make small holes on the foil
  • Keep the vessel in a steamer for 25 minutes or bake the pudding in oven
  • If the pudding gets detached from the edge of vessel, it means that the pudding is cooked
  • Further, allow the pudding to cool
  • Transfer the pudding to a refrigerator for 2 hours
  • After 2 hours, invert the pudding to a plate
  • Cut it into pieces and serve.

This recipe provides you a fudge and chocolaty brownie with crispy edges. After Baking, you will see that the brownie is finished in no time. I prefer having hot brownies with Ice creams.

  • Double boil the chocolate and butter
  • Stir it using a spatula
  • After sometime,the mix melts
  • Keep it aside for cooling
  • Take another bowl,add eggs
  • Using a beater,beat the eggs
  • Add vanilla essence followed by sugar powder
  • Mix it together
  • Now add the chocolate and butter mix which is kept aside
  • Add the dry ingredients- All purpose flour and cocoa powder
  • Mix everything using a spatula
  • Line the cake tin with butter paper and pour the batter to it
  • Preheat the oven at 180°C and bake for 25 minutes
  • After 25 minutes,the perfect brownie is ready
