This is a special and instant unniyappam recipe which do not have jaggery in it. Instead of Jaggery, I had used sugar. This special unniyappam is a small round snack made from flours, banana, sugar and cardamom powder. This is a super delicious evening snack which does not take much time to prepare. So, you can easily prepare for your kids who are way back from their schools.

Unniyappam is a popular South Indian snack or sweet treat that is made from wheat flour, sugar, and a few other ingredients. It is a type of deep-fried dumpling or fritter and is a traditional dish in the South Indian states of Kerala and Tamil Nadu. Unniyappam is typically prepared during festivals, special occasions, or as a delicious snack.

Here’s how unniyappam is typically made:

Ingredients:

Wheat flour: The primary ingredient in this unniyappam is, of course, wheat flour and all purpose flour. It provides the base for the dumpling and gives it a distinct texture.

Sugar: It imparts a unique caramel-like flavor to the dish.

Ripe bananas: Mashed ripe bananas are often added to the batter, not only for sweetness but also to provide moisture and a subtle banana flavor.

Coconut: Grated coconut is a common ingredient, adding a mild coconut flavor and texture to the unniyappam.

Cardamom: Ground cardamom seeds are used to flavor the dish, giving it a delightful aromatic quality.

Baking soda or yeast: Some recipes call for a leavening agent like baking soda or yeast to make the unniyappam light and airy.

Oil: Oil is used for frying the dumplings. Traditionally, ghee is preferred for its rich flavor, but vegetable oil works as well.

Instructions:

In a mixing bowl, combine wheat flour, all purpose flour, mashed ripe bananas, grated coconut, sugar, ground cardamom, and any leavening agent if you’re using one. Mix these ingredients well to form a thick batter. The consistency should be similar to pancake batter.

Heat oil in a deep frying pan

Once the oil is hot, carefully pour a spoonful of the batter to it.

Allow the unniyappam to cook on one side until it turns golden brown and crisp. Then, flip them over using a skewer or a fork and cook the other side until it’s evenly browned.

Remove the fried unniyappam from the pan and place them on a paper towel to drain excess oil.

Repeat the process with the remaining batter, adding more  oil as needed.

Serve unniyappam while they are still warm. They are best enjoyed fresh and can be a delightful snack or dessert.

Unniyappam is loved for its sweet and slightly crispy exterior with a soft, flavorful interior. It’s a wonderful treat to enjoy with a cup of tea or as a special dessert during festive occasions.

Ingredients

  1. Whole wheat flour – 1/2 cup
  2. All purpose flour- 1 cup
  3. Rice powder – 2 tablespoon
  4. Semolina/ Rava – 2 tablespoon
  5. Baking soda – 1/4 teaspoon
  6. Banana – 6
  7. Sugar – 1/2 cup
  8. Cardamom- 1/2 teaspoon
  9. Grated coconut- 1/2 cup
  10. Water – 3/4 cup
  11. Oil – to fry

Method of preparation

  1. Cut the bananas into pieces and blend it using a mixer grinder
  2. Transfer the banana paste to a bowl
  3. Add all the remaining ingredients to the bowl
  4. Mix well everything
  5. Heat oil in a pan
  6. Take out one spoon of batter and with another spoon detach the batter to the oil
  7. Similarly add 5 to 6 spoons of batter
  8. Adjust the flame to medium and flip the appam when the color changes to brown
  9. Transfer the unniyappam to a plate when the color becomes golden brown
  10. Serve hot with tea.
