To make tender coconut pudding, you'll need the following ingredients:

Tender Coconuts: Start with fresh tender coconuts. The tender coconut water and flesh inside should be sweet and flavorful.

Milk: Use 1/2 cup of whole milk. You can also use coconut milk for an even stronger coconut flavor.

Gelatin: 2.5 teaspoons of unflavored gelatin powder will help set the pudding.

Sugar: 4 tablespoons of granulated sugar or to taste.

Ensure you have the following kitchen equipment ready:

  1. Blender: To blend the tender coconut flesh and create a smooth puree.

  2. Saucepan: For heating the milk and dissolving the gelatin.

  3. Whisk: To combine the ingredients and ensure a smooth pudding mixture.

  4. Pudding Molds or Glasses: You can use individual pudding molds or glasses for serving.

  5. Refrigerator: To set the pudding.

Step-by-Step Instructions

Now, let's dive into the step-by-step process of making tender coconut pudding:

Prepare the Tender Coconuts:

Carefully open the tender coconuts and collect the water. Reserve the coconut water in a separate container. Scoop out the tender coconut flesh and transfer it to a blender. Add a bit of the collected coconut water to help blend it into a smooth puree. Blend until you get a creamy consistency.

Bloom the Gelatin:

In a small bowl, sprinkle the gelatin powder over 1/4 cup of coconut water. Allow it to sit for 5-10 minutes until it becomes soft and spongy.

Heat the Milk:

In a saucepan, heat the whole milk over low to medium heat. Add the sugar and stir until it dissolves completely. Do not bring it to a boil; just heat it enough to dissolve the sugar.

Combine the Ingredients:

Once the milk is warm and sugar is dissolved, remove it from the heat. Add the softened gelatin to the warm milk and stir until it completely dissolves. Pour the tender coconut puree into the milk mixture and mix well.

Set the Pudding:

Pour the pudding mixture into individual molds or glasses. Place the molds in the refrigerator and let them chill for at least 4-6 hours or until the pudding sets completely. You can also leave them overnight for best results.

Serve the Tender Coconut Pudding:

Once the pudding is set, remove it from the molds by dipping them briefly in hot water to loosen the edges. Garnish with desiccated coconut, a drizzle of tender coconut water, or fresh coconut shavings for a tropical touch. Serve your tender coconut pudding chilled and enjoy!

Tips and Variations

  1. For a vegan version, use coconut milk instead of whole milk, and replace condensed milk with sweetened coconut condensed milk.

  2. Experiment with different garnishes like sliced fruits, crushed nuts, or a dollop of whipped cream to customize your pudding.

  3. If you prefer a smoother texture, strain the tender coconut puree before adding it to the milk mixture.

  4. Make sure to refrigerate the pudding until it's properly set; this ensures the perfect consistency.
