Easy Unniyappam

This is a special and instant unniyappam recipe which do not have jaggery in it.Instead of Jaggery,I had used sugar.This special unniyappam is a small round snack made from flours,banana,sugar and cardamom powder.This is a super delicious evening snack which does not take much time to prepare.So,you can easily prepare for your kids who are way back from their schools.

Ingredients:

  • Whole wheat flour – 1/2 cup
  • All purpose flour- 1 cup
  • Rice powder – 2 tbsp
  • Semolina/Rava – 2 tbsp
  • Banana – 6
  • Sugar – 1/2 cup
  • Cardamom- 1/2 tspn
  • Grated coconut- 1/2 cup
  • Water – 3/4 cup
  • Oil – to fry

Method of preparation:

  • Cut the bananas into pieces and blend it using a mixer grinder
  • Transfer the banana paste to a bowl
  • Add all the remaining ingredients to the bowl
  • Mix well everything
  • Heat oil in a pan
  • Take out one spoon of batter and with another spoon detach the batter to the oil
  • Similarly add 5 to 6 spoons of batter
  • Adjust the flame to medium and flip the appam when the colour changes to brown
  • Transfer the unniyappam to a plate when the colour becomes golden brown
  • Serve hot with tea

Barbecue Chicken

Barbecue chicken consists of chicken parts or entire chickens that are barbecued, grilled or smoked. Heat should be under our control.Slow cooking gives the delicious BBQ chicken.You can have it with khuboos,Chappathis,etc.Have a dip with mayonnaise and enjoy this yummy Chicken.

Ingredients :

  • 1 whole chicken,cut into 12-14 pieces
  • Kashmiri chilli powder- 2 tbspn
  • Turmeric powder- 1 tspn
  • Pepper powder- 1 tspn
  • Ginger garlic paste-  2 tspn
  • Curd – 1/2 cup
  • Tomato sauce – 2 tspn
  • Lemon juice- 1 tspn
  • Salt – as per your taste

Making of paste(a) :

  • Onion – 1 big
  • Tomato – 1
  • Coriander leaves – 3 sprig
  • Mint leaves – 3 sprig

For basting(b) :

  • Butter – 1 tbsp
  • Olive oil- 2 tbsp

Method of preparation:

  • Clean and wash the whole chicken pieces
  • Make slits/cuts on the bigger pieces
  • Marinate the chicken pieces with the ingredients mentioned above
  • Grind onion,tomato,mint and coriander leaves to make a paste
  • Add it to chicken and mix well using hand
  • Let it rest for 1 to 2 hours
  • Preheat the electric grill
  • Apply some oil using a spatula
  • Add the chicken pieces one by one
  • Flip the chicken piece and baste butter over it when the colour changes(using b)
  • Cook till the chicken pieces are charred
  • Serve hot with mayonnaise and salad

Stir Fried Beans/Beans Mezhukkupuratti

The Beans Mezhukkupuratti Recipe is a simple stir fry of beans along with onion and curry leaves.This is a very simple recipe which can be consumed along with rice.

Beans Stir Fry

Ingredients :

  • Beans – 250g
  • Onion thin sliced- 1 big
  • Green chilli – 1
  • Turmeric powder- 1/4 tspn
  • Pepper powder- 1/2 tspn
  • Curry leaves – 1 sprig
  • Coconut oil – 1 tspn
  • Salt – as per your taste

Method of preparation :

  • Wash the beans and discard the edges
  • Cut it in 2 inch long pieces
  • Pressure cook the beans by adding 2 tbsp of water and a pinch of salt
  • Release the pressure immediately after 1 whistle by placing the cooker under cold water
  • Take the cooked beans and keep aside
  • Heat oil in a kadai
  • Add sliced onion
  • Once the onion becomes transparent,add green chilli and curry leaves
  • Add turmeric powder and pepper powder to it
  • Add cooked beans and season it with salt
  • Stir fry the beans for 3 to 4 minutes
  • Check and adjust the salt
  • Serve hot along with Rice.

NB :

  • Remove the beans from pressure cooker after one whistle ,else the beans will get over cooked and will lose its colour
  • Use coconut oil for the best taste
  • You can also add 2 tbsp of coconut slices along with beans

Mango Jam

Mangoes are the best fruit which is available during summer.Using mangoes,varieties of dishes and sweets can be prepared.Here is the recipe of Mango Jam using 3 ingredients and is 100 % natural.No preservatives or coloring agent is added.This home made jam is super tastier than the jam which we buy from shops.You can refrigerate this jam for 1-2 months and can use whenever required with breads and chappathi’s.

Ingredients :

  • Ripe Mangoes –  1/2 kg
  • Sugar – 1 cup
  • Lime juice – 1 tspn
Mango Jam

Method of preparation :

  • Wash,Peel of the mangoes and cut it into pieces
  • Add these mango pieces into mixer grinder
  • Blend the mangoes to a fine paste
  • Add the mango puree to a pan and heat it
  • Add sugar once the bubble forms from the puree
  • Mix well
  • Once the sugar dissolves,add lime juice
  • Stir continuously so that it does not stick to the pan
  • Cook till it becomes thicker and reaches Jam consistency
  • Remove from the heat
  • Transfer it to a glass jar when it is lukewarm
  • Close the glass jar after the jam cools completely
  • Refrigerate the jam
  • Have this delicious jam with bread,Chappathis,etc.

NB :

  • Semi-ripe mangoes are best for making jams
  • Use a glass jar to store jam
  • Refrigerate jam since no preservatives are added
  • Take out jam using dry spoon only

Chocolate Brownie

Chocolate brownies are square or rectangular chocolate baked confection.First of all let me tell you one thing,exact measurement of ingredients is one of the main thing you must follow while making Brownie.Else you may end up with disappointment.But relax,here I will give you the correct way of preparing brownies with minimum ingredients.This recipe provides you a fudgy and chocolaty brownie with crispy edges.After Baking,you will see that the brownie is finished in no time.I prefer having hot brownies with Ice creams.

Ingredients :

All purpose flour – 3/4 cup

Cocoa powder- 1/4 cup

Sugar – 3/4 cup

Chocolate compound- 200 gm

Butter – 100 gm

Egg – 3

Vanilla Essence- 1.5 tspn

Method of preparation :

  • Take a bowl and add chocolate compound which are cut into pieces
  • Add butter to it
  • Double boil the chocolate and butter
  • Stir it using a spatula
  • After sometime,the mix melts
  • Keep it aside for cooling
  • Take another bowl,add eggs
  • Using a beater,beat the eggs
  • Add vanilla essence followed by sugar powder
  • Mix it together
  • Now add the chocolate and butter mix which is kept aside
  • Add the dry ingredients- All purpose flour and cocoa powder
  • Mix everything using a spatula
  • Line the cake tin with butter paper and pour the batter to it
  • Preheat the oven at 180°C and bake for 25 minutes
  • After 25 minutes,the perfect brownie is ready

NB : Baking time and temperature may vary as per the oven which you are using.

Banana Fritters

From my childhood memories,one of the best thing coming up in my mind is having hot banana fritters and tea while coming back home from school in the evening.My mom used to prepare this snack almost every weeks.There are different ways to prepare this snack.The difference is in the preparation of batter.These are the perfect ways to use the ripe bananas before they go bad.Serve this lovely crispy treat to your family.

Banana fritters

Ingredients:

Banana – 4 no.

All purpose flour – 1 cup

Whole wheat flour – 1/4 cup

Rice flour- 1 tbspn

Sugar – 3 tbsp

Salt – 1/4 tspn

Turmeric powder- small pinch

Cumin seeds – small pinch

Water – 1.5 cup

Oil – to fry

Method of preparation:

  • Take a bowl and add all purpose flour,rice flour and whole wheat flour
  • To the bowl add sugĺar,salt,turmeric powder and cumin seed
  • Add 1.5 cups of water and mix well
  • Batter should not be too loose or too thick(should be thicker than dosa batter)
  • Taste and add sugar if needed
  • Peel and cut the banana into six slices
  • Heat oil in a kadai
  • Dip each banana slice in the batter one by one
  • Add 3 to 4 banana slices to the kadai
  • Fry the banana slice till both sides become crispy and golden brown
  • Transfer these banana slices to a tissue so that the excess oil is removed
  • Serve hot along with tea

NB :

  • Oil should be hot before adding the banana slices
  • Batter consistency should not be too loose
  • Flame should be medium,else bananas will burn

Rava Upma

Upma is a popular and common breakfast recipe from South India.This recipe is made using roasted rava,salt and water as the main ingredient.This is an easy breakfast and takes only less than 15 minutes.So,if you are in a hurry burry or woke up late by chance,you can easily go for this breakfast for your family.Even the Bachelors can try it as it is very easy to prepare.

Rava upma

Ingredients :

  • Roasted Rava/Semolina- 1 cup
  • Finely chopped Onion – 1
  • Grated carrot – 1
  • Green chilli finely chopped – 1
  • Chopped ginger – 2 tspn
  • Grated coconut – 3 tbspn
  • Mustard seeds – 1 tspn
  • Urad dal – 2 tspn
  • Bengal gram – 1 tspn
  • Curry leaves
  • Salt
  • Hot water – 3 cups
  • Coconut oil – 2 tbspn
  • Ghee – 1 tspn

Method of preparation:

  • Heat oil in a pan
  • Sputter Mustard seeds,urad dal and
  • Add onion,carrot,green chilli,curry leaves and ginger
  • Saute well till the onion becomes translucent
  • Add salt,grated coconut and saute for 1 minute
  • Add 3 cups of hot water
  • Allow it to boil
  • Taste and adjust the salt as per your taste
  • Add the roasted rava to the boiling water,make sure the flame is medium
  • Mix well and close the pan and cook for 2 minutes
  • Add ghee to it and mix well
  • Open the pan and transfer the upma to serving plates
  • Garnish our delicious upma with curry leaves.

NB :

  • Give care while adding salt
  • Flame should be medium while adding roasted rava

Kadala curry

Kadala curry or black chickpea curry is made using black chickpea with grinded coconut.Black chickpeas being a good source of proteins, this curry is nutritious and healthy.This curry is one of the most common breakfast curries in kerala.It goes well with puttu,idiyappam,paratha,poori,etc.It can also be used as side dish for rice.When I hear of puttu,the best vegetarian combination that comes in my mind is this kadala curry.I will share the recipe of Kadala curry.Here is how to do it.Please do try at home.

Ingredients:

  • Kadala/Black chickpeas – 1 cup
  • Grated coconut- 1/2 cup
  • Onion – 2
  • Tomato – 1
  • Ginger garlic paste- 1 tspn
  • Turmeric powder- 1/4 tspn
  • Chilli powder- 1/2 tspn
  • Coriander powder – 1 tspn
  • Garam masala – 1 tspn
  • Green chilli – 2
  • Salt – as per required
  • Water
  • Oil

Method of preparation :

  • Rinse and soak the black chickpeas in 2 cups of water overnight
  • Pressure cook the chickpeas by using the same water + additional 1 cup of water by adding 1 tsp of salt
  • Meanwhile when the chickpeas are getting cooked,take a kadai
  • Add 2 tablespoon of oil
  • Add onion,stir and saute for a minute
  • Then add ginger garlic paste and green chilli
  • Saute till the onion becomes golden brown
  • Add tomato
  • Now add turmeric powder,chilli powder,coriander powder and garam masala
  • Stir the masalas very well on a low flame and saute for a minute
  • Grind the grated coconut and one handful of cooked chickpeas by adding some water
  • Add it to the prepared masala
  • Finally add the cooked black chickpeas/kadala to it
  • Add the chickpeas stock also
  • Taste and add salt if needed
  • Let the curry boil
  • Simmer until all the flavors and the chickpeas are well blended
  • Garnish the curry with curry leaves.

NB : Grinding together grated coconut and some cooked chickpeas gives a good texture for our curry.
