Prawns roast is a popular seafood dish known for its rich flavors and aromatic spices. This dish is a staple in coastal regions, especially in South India, where seafood is an integral part of the cuisine. Prawns roast combines the delicate taste of prawns with a medley of spices, creating a flavorful and satisfying meal.
Ingredients
Prawns: The star ingredient. Fresh, medium to large-sized prawns are preferred for their texture and taste.
Spices: Key spices include turmeric, red chili powder, pepper powder, and coriander powder. These spices provide the characteristic heat and depth of flavor.
Ginger and Garlic: These aromatic ingredients are crucial for the marinade and cooking process, imparting a robust flavor.
Curry Leaves: Widely used in South Indian cooking, curry leaves add a unique fragrance and flavor.
Oil: Coconut oil is often preferred for its distinctive taste, though other cooking oils can also be used.
Preparation
Cleaning and Marinating:
Clean and devein the prawns, ensuring they are thoroughly washed.
Marinate the prawns with a mixture of turmeric powder, red chili powder, black pepper, lemon juice, and salt. Let them sit for about 15-30 minutes. This allows the prawns to absorb the flavors and enhances their taste when cooked.
Cooking:
Heat coconut oil in a heavy-bottomed pan or a skillet.
Add finely chopped onions and sauté until they turn golden brown. This step is crucial as caramelized onions contribute significantly to the dish's flavor.
Add ginger-garlic paste and sauté until the raw smell disappears.
Add chopped tomatoes and cook until they are soft and oil starts to separate from the mixture.
Incorporate the remaining spices: coriander powder, additional red chili powder (if desired), and a handful of curry leaves. Cook this spice mixture on low heat to avoid burning and ensure the spices are well integrated.
Add the marinated prawns to the pan. Stir well to coat the prawns with the spice mixture.
Cook on medium heat, stirring occasionally. Prawns cook quickly, usually within 5-7 minutes. Be careful not to overcook them as they can become tough and rubbery.
Once the prawns are cooked through and have a nice roasted appearance, check the seasoning and adjust if necessary.
Finishing Touches:
Garnish with fresh coriander leaves and a squeeze of lemon juice for an extra burst of flavor.
Serve hot with steamed rice, roti, or as an appetizer.
Variations
Regional Twists: Different regions add their unique touch. For instance, in Kerala, coconut milk may be added for a richer gravy, while in Andhra Pradesh, the dish might be spicier with more chilies.
Additions: Some recipes include additional vegetables like bell peppers or spinach for added texture and nutrition.

Freshness: Always use fresh prawns for the best flavor.
