Kadala Curry

Kadala curry or black chickpea curry is made using black chickpea with grinded coconut.Black chickpeas being a good source of proteins, this curry is nutritious and healthy. This curry is one of the most common breakfast curries in kerala.

It goes well with puttu, idiyappam, paratha, poori, etc. It can also be used as side dish for rice. When I hear of puttu, the best vegetarian combination that comes in my mind is this kadala curry. I will share the recipe of Kadala curry. Here is how to do it.Please do try at home.

First let’s see the ingredients for this preparation.

Ingredients:

  • Kadala/Black chickpeas – 1 cup
  • Grated coconut- 1/2 cup
  • Onion – 2
  • Tomato – 1
  • Ginger garlic paste- 1 tspn
  • Turmeric powder- 1/4 tspn
  • Chilli powder- 1/2 tspn
  • Coriander powder – 1 tspn
  • Garam masala – 1 tspn
  • Green chilli – 2
  • Salt – as per required
  • Water
  • Oil

Method of preparation :

  • Rinse and soak the black chickpeas in 2 cups of water overnight
  • Pressure cook the chickpeas by using the same water + additional 1 cup of water by adding 1 tsp of salt
  • Meanwhile when the chickpeas are getting cooked,take a kadai
  • Add 2 tablespoon of oil
  • Add onion,stir and saute for a minute
  • Then add ginger garlic paste and green chilli
  • Saute till the onion becomes golden brown
  • Add tomato
  • Now add turmeric powder,chilli powder,coriander powder and garam masala
  • Stir the masalas very well on a low flame and saute for a minute
  • Grind the grated coconut and one handful of cooked chickpeas by adding some water
  • Add it to the prepared masala
  • Finally add the cooked black chickpeas/kadala to it
  • Add the chickpeas stock also
  • Taste and add salt if needed
  • Let the curry boil
  • Simmer until all the flavors and the chickpeas are well blended
  • Garnish the curry with curry leaves.

NB : Grinding together grated coconut and some cooked chickpeas gives a good texture for our curry.

Cheese Garlic Bread

Cheese Garlic Bread

Garlic bread is a form of bread which is made of dough and is topped with garlic, butter and herbs. This is an Italian dish,so it comes under Italian cuisine. The presence of garlic helps to develop our immunity system compared to other normal breads. You can use either whole wheat flour or all purpose flour. In this recipe, I had baked the garlic bread using an OTG. It came out very well. The bread is perfect and your whole family will definitely love it.

First let’s see the ingredients for this preparation.

Ingredients :

For Bread :

All purpose flour – 1 cup

Warm water – 1/4 cup

Yeast – 1/2 tspn

Sugar – 1 tspn

Oregano – 1/2 tspn

Chilli flakes – 1/2 tspn

Garlic powder – 1/2 tspn

Oil – 1/2 tspn

For Stuffing :

Mozzarella cheese – 4 tbspn

2 tbspn butter

1 tbspn garlic paste

2 tbspn coriander

1/2 tbspn oregano

1/2 tbspn chilliflakes

1/2 tbspn finely chopped garlic

(you can also add anything as per your wish,you can even stuff your favourite cooked non-veg also )

Method of preparation:

*Activate the yeast by adding it to 1/4 cup of warm water along with sugar in a bowl.Stir it and cover using a lid.Keep aside for 15 minutes.I had used active dry yeast

*Take a bowl and add All purpose flour,oregano,garlic powder,chilli flakes and mix it well

*Now add the activated yeast to it and knead well for 15 minutes

*Add oil to the dough and knead it once again.Cover the dough using a lid and keep it to rest for 2-3 hrs

*After 3 hours roll the dough using a rolling pin to a round shape

*Mix butter,garlic paste and coriander leaves

*Spread it over the flattened dough

*Add cheese,oregano,chilliflakes over it

*Now fold it into half

*Spread the leftover buttermix on the top of the folded portion

*Again add oregano,chilliflakes and chopped garlic on top of it

*Take a pizza pan with butter paper over it

*Place this folded dough over it and cut the top portion,so that we may easily cut it into strips after baking

*Preaheat Oven at 180° and bake it for 10- 15 minutes

PS : Do not over bake.The bread will become crispier

Stuffed Bread

Stuffed Bread

This is a very easy and quick evening snack. Please try this home.

First let’s see the ingredients for this preparation.

Ingredients :

  • Bread slices – 4
  • Egg -1
  • Onion – 1 small
  • Tomato – 1 small
  • Capsicum – 1 tbsp
  • Coriander leaves- 1 tspn
  • Grated cheese- 1.5 tbsp
  • Salt – as per taste
  • Pepper – half tspn
  • Ghee – to toast bread

Preparation :

  • Chop onion, tomato, capsicum and coriander leaves
  • Cut out the middle square portion of all the bread slices and keep it aside
  • Take a bowl and add 1 egg
  • Beat the egg properly with a sppon or beater
  • Now add the chopped vegetables, salt and pepper powder to it
  • Take a pan and add 1 tspn of ghee
  • Place the bread over pan
  • Add the egg mix in the centre of bread
  • Add the grated cheese over the egg mix
  • Then, replace the cut portion of the bread
  • After 40 sec,turn the bread upside down

  • Wait for 30 seconds and our Stuffed Bread is ready to serve.
