Pork Curry

  • Pork – 500gm (cut into small pieces)
  • Onion – 2
  • Garlic cloves – 10
  • Ginger – 3 inch piece

All the above three ingredients should be finely chopped.

  • Green chilly – 6, sliced
  • Chilly powder – 1.5 teaspoon
  • Coriander powder- 1.5 teaspoon
  • Turmeric powder- 0.5 teaspoon
  • Pepper powder- 1.5 teaspoon
  • Garam masala – 1 teaspoon
  • Mustard crushed- 0.5 teaspoon
  • Mustard sauce- 0.5 teaspoon
  • Tomato sauce – 1 tablespoon
  • Salt – to taste
  • Corn flour – 2 teaspoon
  • Coconut oil – 2 tablespoon
  • Curry leaves – 2 sprig
  • Coriander leaves – to garnish

Method of preparation:

Mix turmeric, chilly, coriander powders, salt and both mustard together, rub the mix on pork, add half onion, ginger, garlic and keep for 2 hours. Pressure cook pork and keep aside. Heat oil add one sprig curry leaves, saute onion, till translucent, add ginger, garlic, green chilly, add pepper powder and garam masala stir for 30 seconds, add meat and saute well. Mix corn flour in meat gravy, add to the roasted meat, combine well add curry leaves, tomato sauce, stir well, transfer to serving bowl, garnish with coriander leaves and serve.

Chilli pork

Chilli pork is one of the best and versatile dishes which goes well along with Noodles, Fried Rice , Nan, Chappathi, etc. In this recipe,the pork slices are very juicy. Chilli pork has got many varieties of preparation. This is a fantastic recipe of my mother, which she had received too many calls from other’s for the recipe after having taken her invitation for lunch and dinner.

Ingredients:

Cooking of pork :

  • Pork – 1 kg
  • Chopped Ginger – 1 tablespoon
  • Vinegar – 1 tspn
  • Soya sauce – 1 tspn
  • Pepper powder-
  • Salt – as per required
  • Water – 1 cup

Cook the pork in pressure cooker by adding all the above ingredients in 1 cup of water.Pork pieces should be in the form of thin slices

Preparation of chilli pork :

  • Carrot – 2
  • Capsicum chopped square shape- 2
  • Onion chopped in square shape  – 3
  • Kashmiri chilli powder – 1 tspn
  • Pepper powder – 1/2 tspn
  • Green chilli – 2
  • Cornflour- 1 tbsp
  • Chopped celery – 2 tspn
  • Tomato sauce – 3 tbsp
  • Chilli sauce – 2 tbsp
  • Oil

Take a pan and add oil to it.Add onion,green chilli,carrot and saute well.Then add chilli powder and pepper powder to it.Saute until the raw smell goes completely.Add the cooked pork to it.Mix cornflour in 1 cup of water and add to pan.Add tomato sauce and chilli sauce to it.Saute for 2 minutes.Then add Capsicum.Garnish it with celery and serve hot.

NB : Addition of capsicum gives a wonderful taste.

Grandma’s Easy Pork Roast

First let’s see the ingredients for this preparation.

Ingredients:

For marinating Pork :

  • Pork – 1 kg
  • Turmeric powder – 1 tspn
  • Pepper powder- 1 tspn
  • Salt- 1 tspn
  • Vinegar- 2 tbsp

For making masala :

  • Onion -4
  • Shallot – 15
  • Garlic – 6 pods
  • Green chilli – 2
  • Pepper powder- 1/2 tspn
  • Turmeric powder – 1/2 tspn
  • Garam masala – 1 tspn
  • Oil – 3 tablespoon (Use coconut oil for good taste)
  • Curry leaves – a few
  • Salt – to taste

Preparation:

  • Wash the pork properly and add 1 tspn each of turmeric and pepper powder
  • Mix it properly and marinate it for half hour
  • Then Pressure cook the pork
  • Chop onions,shallots,garlic and green chilli
  • Take a pan/kadai and add oil
  • Add chopped garlic,green chilli,onions and shallot one by one
  • Saute it till it reaches golden brown colour
  • Add turmeric powder, pepper powder,salt and garam masala to it
  • Saute it properly
  • Then add cooked pork to the pan/kadai and mix it properly
  • Add curry leaves and fry well
  • Add salt and pepper as per your taste
