Rava Kesari

Rava Kesari is a popular and delicious South Indian sweet made from rava or semolina. This is actually semolina pudding. It is served as breakfast in Karnataka and Tamil Nadu. The word Kesari means orange colour. The orange colour is formed by adding saffron or orange food colour. Instead of going with artificial food colours, you can choose natural colour agents. This dish is a mouth melting dessert. Rava Kesari is used as dessert in functions. It is also used during pooja’s. Now let us move to the recipe part. I had also shared some tips to be noted while making Rava kesari at the end of the recipe.

First let’s see the ingredients for this preparation.

Ingredients:

  • Rava/Semolina – 1 cup
  • Ghee – 3/4 cup
  • Water – 3.5 cups
  • Cashew and Raisins – as per your wish
  • Sugar – 1 cup
  • Orange food colour- optional

Method of preparation:

  • Heat 1 teaspoon ghee in a kadai
  • Roast raisins and cashewnut in the ghee
  • Transfer the roasted raisins and cashewnut to a plate
  • Now roast the rava in that ghee in low flame till the aroma of the rava comes out
  • Transfer the roasted rava to another plate
  • Add 3.5 cups of water to the kadai and boil
  • Add 1/4 cup of ghee to the boiling water
  • Add roasted rava to it
  • Mix well till the water gets absorbed.Make sure that no lumps are formed
  • Add 1 cup of sugar to it
  • Stir well and make sure that the sugar dissolves completely
  • Add the remaining half cup of ghee to it
  • Stir continuously so that no lumps are formed
  • Simmer it for 2 minutes by closing the lid
  • You can see that the kesari is getting detached from the pan.It means that our kesari is almost ready
  • Mix cashewnut and raisins with it
  • Our rava kesari is ready to serve

Tips to be noted :

  • While roasting rava,make sure that the colour of the rava does not changes
  • Add Rava only after the water gets completely boiled
  • Add sugar only after the roasted rava gets completely cooked in water
  • Follow the correct measurement of ingredients
  • If you are using food colour,add it to the boiling water
