Russian salad, also known as Olivier salad, is a traditional dish that originated in Russia in the 19th century. It’s a cold salad typically made with boiled potatoes, boiled eggs, peas, carrots, and sometimes pickles and apples. The ingredients are diced into small pieces and then mixed with mayonnaise or a mayonnaise-based dressing.

The salad is often served during holidays, celebrations, and special occasions in Russia and in other countries as well. Variations of the Russian salad can include additional ingredients such as ham, chicken, bologna, or sausages.

The salad has a creamy texture due to the mayonnaise and is known for its unique blend of flavors and textures. It’s a popular dish in many parts of the world and has been adapted in different ways to suit local tastes.

Ingredients

  1. Potatoes chopped into small cubes – 500 g
  2. Carrots – 200 g
  3. Tomato chopped without pulp – 1
  4. Apple chopped and marinated with lemon juice – 1
  5. Mayonnaise – 150 g
  6. Frozen Peas – 125 g
  7. 1 spring onion sliced
  8. Handful of parsley
  9. Salt and pepper

Method of preparation

Boil the chopped potatoes in water by adding salt to the water for about 10 minutes. Add the carrots and frozen peas and continue to cook for 4 to 5 minutes until the vegetables are cooked through. Drain the boiled water, cool it under cold running water and drain once again.

Mix the cooked vegetables and chopped apple and tomato with mayonnaise. Garnish it with spring onion and parsley. Season with salt and pepper to taste.

Transfer the salad to a serving bowl and serve beautifully !
