Sticky dates pudding, also known as sticky toffee pudding, is simply a moist sponge cake made with finely chopped and soaked dates, covered with toffee sauce. You can easily prepare this pudding in under 50 minutes. Finely chopped dates, moist sponge cake and toffee sauce are the main ingredients of sticky dates pudding.

This pudding is an absolute treat for all the sweet tooth, as the sweet comes from both the dates and the toffee sauce over it. The proper way to serve this pudding is to pour warm sauce over the cake. The moist and dark dates cake piece should be covered with hot and sweet toffee sauce. Pureed dates are the main ingredient of this pudding. Dates provide the distinctive flavour, colour and texture to the sponge cake. These dates makes the sponge cake moist. Hence they are named as sticky dates pudding.

Sticky dates pudding are perfect desserts for parties and holidays. We are using brown sugar in this recipe instead of normal white sugar. This rich and comforting pudding is actually a British dessert that you can serve along with ice creams or whipped creams. You can bake this cake in your oven or stove top. Pre-heating a large pot and placing the cake tin inside it allows you to bake on the stove top. Insert a stand on the pot and place the cake tin over the stand. Bake till the cake is done completely.

The actual trick is to completely soak the sponge cake with the warm toffee sauce before you serve it. The toffee sauce should not be piping hot. Rather it should be served warm. Sticky toffee pudding became one of my favourite desserts of all time. This pudding can be easily prepared at your home. You can make enough to serve everyone in your family. I am glad that this pudding will finish off soon, once made.

Butter, brown sugar and fresh cream is a lovely combo of all the flavours which makes this sauce delicious with a glace. Always warm the sauce before topping it over the cake and wait for 10 to 15 minutes, so that the sauce goes deep inside our dates sponge cake. You can also bake the cake in separate muffin pans, so that you can serve directly without cutting. Check out this classic British dessert at your home and prepare it easily for your family.

Ingredients

1) For pudding cake :

  1. Egg – 1
  2. Unsalted butter – 4 tablespoon
  3. Vanilla essence – 1 teaspoon
  4. Brown Sugar – 3/4 cup
  5. Chopped dates  – 12 numbers
  6. All purpose flour – 1 cup
  7. Hot water – 1 cup
  8. Baking powder – 1 teaspoon
  9. Baking soda – 1/4 teaspoon

2) For Toffee sauce :

  1. Unsalted butter – 100 g
  2. Brown sugar – 1 cup
  3. Fresh cream – 1 cup

Method of preparation

1) Preparing cake :

  1. Soak the chopped dates in 1 cup of hot water for 15 minutes.
  2. Take a large mixing bowl and add brown sugar and butter. Whisk them till creamy consistency is reached.
  3. Add egg, followed by vanilla essence and beat again.
  4. Sieve together all purpose flour, baking powder and baking soda. Add them to the mixing bowl and fold everything using a spatula.
  5. Finally, mash the softened dates and add to the flour mixture.
  6. Grease a cake tin with butter and add the cake flour mixture to it.
  7. Preheat oven at 170° C for 10 minutes and bake the cake for 30 minutes at the same temperature.
  8. Remove the cake from cake tin once it is cooled down.

2) Preparing toffee sauce :

  1. In a saucepan, melt together butter and brown sugar.
  2. Once it is melted, add fresh cream to the pan.
  3. When the sauce becomes thicker, switch off the flame.

3) How to serve the sticky dates pudding ?

    1. Take a serving quarter plate and add some sauce to the plate.
    2. Cut the cake into large square pieces and place one piece of cake over the sauce.
    3. Pour some more sauce over the top of the cake piece.
    4. You can treat your guest with this amazing pudding. Adding vanilla  ice-cream along with the pudding doubles the taste of our pudding.
